Oatmeal Raisin Cookies

Ingredients:

  1. ½ cup (1 stick) unsalted butter, at room temperature, plus extra for greasing the pan
  2. ¾ cup dark brown sugar
  3. 1 egg
  4. 1 teaspoon vanilla extract
  5. ¾ cup whole wheat flour
  6. ½ teaspoon baking soda
  7. ½ teaspoon baking powder
  8. ¼ teaspoon salt
  9. ½ teaspoon cinnamon
  10. 1½ cups “old-fashioned” oats
  11. ½ cup raisins

Directions:

  • Preheat the oven to 350 F. Lightly grease one or two baking sheets.
  •  Cream the butter and the sugar together in a mixing bowl (by hand with a wooden spoon or using a handheld electric mixer) until fluffy.
  • Beat in the egg.
  • Stir in the vanilla extract, flour, baking soda, baking powder, and salt together in a separate mixing bowl. Beat them into the butter mixture.
  • Stir in the oats and raisins.
  • Drop the batter by slightly mounded tablespoons onto the prepared baking sheet(s).
  • Bake until lightly browned on the bottom, 10 to 12 minutes.

Chocolate Crinkle Cookies

Ingredients:

  1. 4 tablespoons (56 grams) unsalted butter
  2. 8 ounces (230 grams)semisweet or bittersweet chocolate, coarsely chopped
  3. 1/2 cup (100 grams) granulated white sugar
  4. 2 large eggs
  5. 2 teaspoons pure vanilla extract
  6. 1 1/2 cups (195 grams) all-purpose flour
  7. 1/4 teaspoon salt
  8. 1/2 teaspoon baking powder

Directions:

  • In a heatproof bowl, placed over a saucepan of simmering water, melt the chocolate and butter. Remove from heat and let cool to room temperature.
  • Beat the eggs and sugar, pale, and fluffy (about 3 to 5 minutes).Then beat in the vanilla extract. Add the cooled chocolate mixture and beat until incorporated.
  • In a separate bowl whisk together the flour, salt, and baking powder. Add dry ingredients to the chocolate mixture, stirring just until incorporated. Cover with plastic wrap and refrigerate until firm enough to shape into balls.
  • Preheat oven to 325 degrees F (165 degrees C) and place rack in center of oven. Line two baking sheets with parchment paper.
  • Place the sifted confectioners sugar in a bowl. First, form the chilled dough into 1 inch (2.5 cm) balls, and then roll each ball in the sugar. Make sure each ball is completely coated, with no chocolate showing through. Place the sugar-covered balls on the prepared baking sheet, spacing about 2 inches (5 cm) apart.
  • Bake cookies for about 8 to10 minutes or just until the edges are slightly firm but the centers are still soft. (For moist chewy cookies do not over bake. Over baking these cookies will cause them to be dry.) Remove from oven and place on a wire rack to cool. These cookies are best eaten the day they are baked.

Shortbread Cookies

Ingredients:

  1. 2 cups (260 grams) all-purpose flour
  2. 1/4 teaspoon (2 grams) salt
  3. 1 cup (2 sticks) (226 grams) unsalted butter, room temperature
  4. 1/2 cup (60 grams) powdered (confectioners or icing)sugar
  5. 1 teaspoon (4 grams) pure vanilla extract

Directions: 

  • In a separate bowl whisk the flour with the salt.  Set aside.
  • In the bowl of your electric mixer (or with a hand mixer), beat the butter until smooth and creamy (about 1 minute). Add the sugar and beat until smooth (about 2 minutes).  Beat in the vanilla extract. Gently stir in the flour mixture just until incorporated.  Flatten the dough into a disk shape, wrap in plastic wrap, and chill the dough for at least an hour or until firm. 
  • Preheat oven to 350 degrees F (177 degrees C) with the rack in the middle of the oven.
  • Cut into rounds or other shapes using a lightly floured cookie cutter.  Place on the prepared baking sheets and place in the refrigerator for about 15 minutes. (This will firm up the dough so the cookies will maintain their shape when baked.)
  • Bake for 8 -10 minutes, or until cookies are very lightly browned.
  • Cool on a wire rack.

Chocolate Chip Cake

INGREDIENTS:

  • 225 g (2 sticks) butter, at room temperature
  • 200 g (1 cup) sugar
  • 1 tsp vanilla extract
  • 4 eggs, at room temperature
  • 240 g (2 cups) all purpose flour
  • 1 tsp baking powder
  • a pinch of salt
  • 200 g (7 0z) chocolate chips

DIRECTIONS:

  1. Preheat oven to 350ºF (180ºC). Grease a 24 cm (9 1/2 inch) spring pan.
  2. Beat butter and sugar together until very fluffy and white, about 4 minutes. Mix in the eggs slowly, one egg at a time, beating after each addition. Add vanilla extract.
  3. In another bowl sift together flour, salt and baking powder. Add the flour mixture slowly to the egg mixture. Don’t over mix. Fold in the chocolate chips with a spatula. Leave a handful for decoration.
  4. Pour batter in the pan and level the top. Sprinkle the handful of the remaining chocolate chips. Bake for about 35 min or until a tooth pick inserted in the center of the cake comes out clean.

Chocolate Shortbread

INGREDIENTS:

  • 1 cup (130 grams) all-purpose flour
  • 1/4 cup (25 grams) unsweetened cocoa powder(regular or Dutch-processed)
  • 1/4 teaspoon salt
  • 1/2 cup (113 grams) unsalted butter, room temperature
  • 1/2 cup (100 grams) granulated white sugar
  • 1 teaspoon pure vanilla extract
  • 1 large egg yolk

DIRECTIONS:

  1. Preheat oven to 350 degrees F (180 degrees C) with the rack in the center of the oven. Lightly butter, or spray with a non stick vegetable spray, an 8-9 inch (20-23 cm) tart pan with a removable bottom.
  2. In a bowl, sift or whisk together the flour, cocoa powder, and salt.
  3. In the bowl of your electric mixer (or with a hand mixer), beat the butter and sugar until smooth (1-2 minutes). Beat in the vanilla extract and egg yolk. Scrape down the sides of the bowl as needed. Addthe flour mixture to the butter and sugar mixture and beat just until a dough forms.
  4. Press the shortbread dough in an even layer onto the bottom of the tart pan.Bake for about 20 -25 minutes, or just until the shortbread is set and no longer looks wet. Remove from oven and place on a wire rack.
